My banana pudding cupcakes will make you question everything you thought you knew about banana pudding.
Several years ago was probably my height of cupcake exploration. I was baking for events, parties, weddings, and everything else under the sun. I was also baking and selling small batches of cupcakes out of my house, just so I could play around with different flavors. On one such occasion, I wondered what it would be like to take my husband’s favorite dessert at the time—banana pudding—and roll it into a cupcake. For die-hard banana pudding lovers, this might seem a bit blasphemous. But when you try the fruits of my experimentation you might walk away with a whole new favorite dessert. Introducing my banana pudding cupcakes with a delicious banana pudding filling.
At first I assumed I should make a banana cupcake. Seems logical, right? That is, until I made a version with my vanilla cupcake recipe as the base. That changed everything for me. Before it seemed too banana heavy, and the texture wasn’t quite right. I want a variation of a dessert to be amazing on its own, not make you wish you were eating the original. The vanilla base did that for me. It, coupled with a filling of homemade custard, bananas, and nilla wafers all mixed together, sends me into banana bliss. Of course banana pudding cupcakes wouldn’t really be complete without a little creaminess on top (my cooked frosting is PERFECT for this) and a nilla wafer for garnish. If you want to go outside the box, try drizzling it with dark chocolate ganache.
