What do you get when you combine Bacon, Booze, and Britain? You get bourbon bacon sticky toffee pudding!
I’ll tell you, one of the hardest things for me to do is cook and bake with bacon. That’s because I don’t eat it, and haven’t for close to 18 years. But I did before, and every once in a while I get a hint of it in foods I eat that use pork when I am unaware. It’s hard to cook with bacon especially because IT’S JUST SO GOOD AND I WANT TO EAT IT ALL! So it should be no big shocker that making bourbon bacon sticky toffee pudding cupcakes is one of the most difficult (and might I add, SELFLESS!) things I have to do. Still, I’m willing to sacrifice for the good of all mankind, because these are just too yummy not to share with the world.
I first made these for a friend’s birthday. Her two favorite things in the world of food & drink are bacon and bourbon. So I got to work on creating this sticky toffee pudding recipe that incorporates a healthy dose of both. I start with my standard sticky toffee pudding recipe and then infuse bourbon into the toffee sauce as well as the fresh whipped cream. I also make candied bacon (!!) to put on top of the cupcake, and I use some of the bacon grease in the toffee sauce. Do you see why this is an act of selflessness?!!! I want to drink this toffee sauce!
Bourbon never tasted so sweet!
One note to be aware of: the bourbon isn’t cooked, so it’s still got all its alcohol punch. There’s not enough for it to have any sort of effect, but if you’re sensitive to that or are thinking of giving it to your kiddos, maybe reconsider the addition of the bourbon. They’re still going to be amazing with the candied bacon involved. And they are fairly simple to make, especially for the flavor punch they pack.
