Lots of people do chocolate stout cupcakes, but using ale instead makes these my favorite chocolate beer cupcakes.
I’ve had a few people visit Craft Cupcakes because they were on the hunt for cupcakes with craft beer in them. I guess it makes sense, and I hope that they’ve been only mildly disappointed to realize there aren’t pages and pages of beer cupcakes for them to drool over. But do not fear! Here are some chocolate beer cupcakes to the rescue! Craft Beer lovers, rejoice!
I first made a beer cupcake several years ago when experimenting with flavors for a friend’s wedding. I wanted to do something unique for the groom’s cake, and this particular groom was a fan of good beer. So I thought I’d go for a chocolate stout cupcake. And it was wonderful. But it made me curious about other flavors to explore, which you know is my favorite thing to do in the kitchen. I have since made a few recipes that I love, but my favorite has to be this ale variation. The combination of an IPA (India Pale Ale) and dark chocolate really creates delicious chocolate beer cupcakes. The structure and texture of these cupcakes SLAY me… they’re substantial but somehow not too dense. The use of the ale keeps them nice and—say it with me—moist. There’s just no other word, and I’m truly sorry for it.
Get picky with the beer.
The type of Ale you use will affect the flavor, so think through what you want to shine through. I like to use a Georgia local called The Hopsecutioner from Terrapin Beer Company. It’s, as you’d probably guess, very hoppy but super flavorful and floral. The contrasting flavors with dark cocoa powder produce beautiful depth of flavor. I top these with my cooked cream cheese frosting, and the combination produces one of the tastiest, most unique chocolate cupcakes I’ve ever had. My husband LOVES these. Practically every person who likes beer even a little bit LOVES these. They’re that good. Please do yourself a favor and make these. Use some sports game as an excuse if you have to. Just make them! 🙂
