A delicious baked good with no grains? These cinnamon swirl goodies are perfect gluten free breakfast muffins.
This recipe is courtesy of my sister, Haley, and I think you’ll be giving her a round of applause once you try your hand at this healthy muffin recipe. These are technically gluten free, grain free, and paleo approved. AND they taste good, which I’m sure you think is a COMPLETE lie. But it is not. They’re perfect with a piping hot mug of coffee for your protein packed breakfast option, but these gluten free breakfast muffins are good anytime of day.
To make these cinnamon swirl muffins, you’ll need to grab a bag of coconut flour and almond flour. Good news is that most groceries are starting to carry these types of products. My local grocery store carries both of these and it isn’t a specialty store at all. I don’t think it’ll be difficult to find these flour alternatives, but if you’re having a hard time you can always order the almond flour & coconut flour from Amazon. You’ll also need some liquid stevia. I try to find a good quality, organic option whenever possible. If you’ve never used stevia drops, be warned: a little goes a VERY long way! That bottle in the link above will last you throughout the rest of time, I swear. I am not a fan of stevia like many of my friends and family are, but in a few recipes I find it really helpful and delicious. This is one such recipe.

I made these in my taller cupcake liners because I wanted to make some hearty gluten free breakfast muffins for my boys. If you opt for larger scoops just be aware that this recipe will yield approximately 8 instead of 12. I actually prefer the texture of them in larger format because they’re a bit stodgier. That’s my bread & butter, but many people aren’t on the same page. Totally fair; they’re still delicious as a smaller variation. And they wouldn’t be cinnamon swirl muffins if they didn’t have a cinnamon swirl! This component ends up feeling almost like a mud pie when you’re stirring it in, but fear not! Once they come out of the oven, that cinnamon swirl will be your best life. 🙂
You can chow down knowing that it’s completely free of grains and refined sugars. We use only stevia and honey, so it’s a relatively guilt-free treat that the whole family will enjoy. My kids love these gluten free breakfast muffins for an actual breakfast or a snack after school.
