If you’ve ever wanted to know what nutter butter cupcakes would taste like, these peanut butter cupcakes are your answer.
When I was a child there were lots of treats that I LIVED FOR. Things like Fun Dip, Big League Chew, Oatmeal Cream Pies, and Nutter Butters were at the top of the list. I didn’t get them often, but when I did I felt like I was on top of the world. Even still, the flavor of a Nutter Butter takes me back to those sweet days. That’s why these peanut butter cupcakes get me positively giddy! They taste like those delicious cookies, just in cupcake form. It makes me think I should tackle a Fun Dip Cupcake…. Hmmm. *Wheels turning.
I found a beautiful peanut butter cupcake recipe from Sally’s Baking Addiction that I just love. And then I paired it with 3 different types of filling and frosting. WHUT?! This recipe has a peanut butter pastry cream, a bit of a vanilla cooked frosting, and peanut butter frosting to top it off. It’s peanut butter and cream overload, and I love it! The only thing that would have made this recipe better would be actual Nutter Butters on top, and you can be assured that I WILL do that next time.
Don’t shy away because of the steps involved.
If the thought of making 3 different fillings/frostings overwhelms you, don’t let it. First of all, the peanut butter frosting is super simple. Secondly, the peanut butter pastry cream is just the custard base for the cooked frosting and a bit of peanut butter mixed together. That’s it! It has a few extra steps than a normal cupcake, but this is no normal cupcake! I am confident that you can pull this off, and the resulting peanut butter cupcakes will be a delicious reward that you can share or keep all to yourself. 🙂 If you decide that it’s not for you, you can definitely just make the peanut butter cupcakes and opt for a simpler frosting. They are tasty regardless.
