These pumpkin pie cupcakes are for when you can’t make up your mind but you know you want something Autumn-inspired and wonderful.
Let’s cut right to the chase. This recipe is my favorite fall recipe, and let me explain why. Yes, I know I’ve already introduced several fall-inspired treats on the blog, and yes, I recommend that you make them because I think they’re fantastic. But this recipe is the product of a new experiment for me, and I love it when experiments churn out better-than-expected results! I knew I wanted to make pumpkin pie cupcakes. But I also knew that I didn’t want to make pumpkin pie in a cupcake tin. No, I wanted something that was kind of a hybrid of both worlds. So I reworked one of my cupcake bases and crossed my fingers. The resulting pumpkin pie cupcakes are extraordinary, full of flavor, and one of the most amazing textures for a cupcake I’ve ever tried.
I ended up using pumpkin pie filling to make these instead of plain pumpkin, which worked beautifully. I think plain pumpkin would work just as well as long as you compensate for the spices and for the difference in moisture (pumpkin pie filling is a bit soupier than regular pumpkin). The base for these is one of my favorites that I use to make Strawberry Rosemary Cupcakes and Key Lime Pie Cupcakes, just to list a couple. I knew I loved the texture of this base and decided to try adding a bit more moisture to the batter to see how it held up. My curiosity was answered with the most wonderful, delicate pumpkin pie cupcakes ever. They aren’t dense and custardy like a typical pumpkin pie, but they somehow seem like the love child of pumpkin pie and a cupcake. Topped with fresh whipped cream, they’re simply magical.
Some baking voodoo happened that I don’t fully understand but can appreciate just the same.
I beg you, PLEASE try these. Make pumpkin pie cupcakes this fall, or even whip them out as a surprise for Thanksgiving. People will lose their minds, I’m almost certain. Nobody will be expecting pumpkin pie cupcakes, and that element of surprise will lead to shouts of praise, an original song praising your baking prowess, and a makeshift crown so that you can lead the parade that will no doubt ensue.
