Summer refreshment in the form of strawberry lemonade cupcakes
My favorite summer beverage of all time is Chick-Fil-A lemonade. It’s tart and just sweet enough, and it has tons of lemon pulp swimming in it. I inevitably want a gallon of it all to myself on Sunday, the day they don’t open at all. Of course. Lemonade in the summer is like apples and pie; they just go together. According to my kids, the only thing better than lemonade is strawberry lemonade, and I might have to agree. Well, these strawberry lemonade cupcakes are all the best things about strawberries and lemonade, wrapped up in cupcake form.
My strawberry lemonade cupcakes get their start with one of my favorite cupcake bases—the one for Strawberry Rosemary Cupcakes. It has perfect texture for any filling and frosting, and out-of-this-world flavor thanks to buttermilk and yogurt. I love this batter for lots of juicy, berry-forward flavors. It’s dense but still light, and the moisture level is off the charts. You’ll find the batter for these strawberry lemonade cupcakes is pretty runny, but do not fret; the finished product is proof that soupy can be amazing. 🙂
Fresh strawberries and tart lemon curd for the win!
The base gets kicked up with lots of lemon juice and fresh strawberries that I puree with just a touch of sugar. I don’t like to get them too smooth because I prefer bits of strawberry here and there. But if that’s not your thing, puree away! The resulting color is a lovely pale pink, so it’s a wonderful treat to bite into one of these beauties and get a taste of lemon curd filling! I top these strawberry lemonade cupcakes with a simple strawberry whipped cream, some lemon zest, and a piece of fresh strawberry. If you want to get Pinteresty and cute, stick a little piece of a straw into the side for presentation. #Pinned.
My kids love these. They actually think the straws are one of the coolest parts, so if you have kiddos you may not want to skip the extra decorations. These strawberry lemonade cupcakes are almost as good as the real thing. I am willing to bet you’ll want to scarf a couple of them this summer, preferably with a big cup of that Chick-Fil-A lemonade to wash them down. 😉
