The favorite on my growing list of unique cupcakes, these strawberry rosemary cupcakes are a winner!
Ok, you guys. If you’ve ever wondered what my favorite cupcake in the whole wide world, ever ever is… you now have your answer. Unique cupcakes really are my love language, and these strawberry rosemary cupcakes are, for me, THE picture of cupcake perfection. They are dense but not quite like pound cake, full of moisture that comes from a delicious homemade strawberry rosemary compote (!!!), and the most wonderful flavor that nods to rustic Italian cooking. Topped with an herbed whipped cream, this one ticks all the boxes for me.
Now hear me out: these will not be everyone’s cup of tea. As I relish the thought of growing a list of unique cupcakes, I am also aware that some of my people need their cupcakes to be everything teeth-rotting and richly sweet that they remember from childhood. I fully understand and even make some of those lovely treats myself. But for me, a refined, interesting cupcake is what heaven will be like. These strawberry rosemary cupcakes are kind of like the cupcake version of “Adulting.”
Unique cupcakes don’t have to be weird.
I first experimented with this flavor in a cupcake after purchasing a strawberry rosemary jam from a now defunct catalog. But that stuff was mind blowing on everything—bread, pound cake, chicken—and it reignited my affinity for sweet & savory. The right combinations of flavors can open up new worlds in your brain. It made me want to try my hand at a sweet & savory cupcake, and since then this has become one of my very favorite flavors to make. I’ve made these for 2 wedding receptions and many birthdays and holidays. Turns out there are plenty of people who enjoy unique cupcakes besides me!
I hope you at least give these strawberry rosemary cupcakes a shot. You may be surprised by how much you like them! And if you find the rosemary cupcake is just too much for you, you can try a more subdued version by using the strawberry rosemary compote as a filling or topping on my yellow cupcake or an even more delicate white cupcake recipe.
