My heart skips a beat every time I catch a whiff of a whole vanilla bean being split. There’s something so magical about its aroma, with delicate floral notes mingling into sweet tobacco. It is rich and wonderful while somehow still remaining subtle. Vanilla’s aroma contributes to a fantastic flavor profile, especially in baked goods, and those magical little vanilla bean seeds are heavenly in a rich cupcake. This recipe is really just a variation of my standard pound cupcake recipe. If you follow my recipes for any length of time, you’ll notice I like to develop a few basic, simple cupcake recipes that I know and love. Then I get to experiment with flavors so I can make endless variations of them. It keeps things easy in the kitchen, and the more you bake them, the more you start to understand how you can change them up and integrate different flavors.
The more vanilla, the better!
This recipe uses cream cheese because I don’t think it’s ever a bad idea to make cream cheese part of your day. Really, the only difference between the standard cupcakes and these vanilla bean pound cake cupcakes is that I scrape an entire vanilla bean into this batter, as well as double up on the vanilla extract. Oh. And I also make a thin vanilla glaze to pour over these babies right when they come out of the oven. The goodness of vanilla just explodes in every bite!
There’s much to celebrate with these vanilla bean pound cake cupcakes, I promise.
